Riddling is an ancestral technique which consists in turning the bottles on their racks to coax the yeast deposits into the neck of the bottle, an obligatory step when making Crémant de Die. Given that Jean-Claude & Frédéric perfected their training in the Champagne region, the Domain proudly perpetuates this technique which is also favoured for its Clairette de Die sparkling wines.
This process avoids the need for any further filtering and ensures a more complex and aromatic structure on the palate, as well as guaranteeing the finesse of the bubbles of our sparkling wines.
