Blending:

Chardonnay grape

Stony hills of the Domaine de la Mûre, calcareous clay soil ; ideal soils for the Chardonnay grape.

 

Wine making & Maturation

Fermentation in oak barrel on their lees, then ageing in oak barrel until spring.

 

Tasting:

Eyes : a brilliant and golden colour
Bouquet : Touch of brioche, white fruits aromas, with honey and vanilla scented finish.
Palate : The mouth is full with buttery notes, with a fresh end note giving a beautiful balance. The olfactory aromas are very present. The wood is light and fused.
Food pairing : For the aperitifs, with a foie gras, fishes, white meat, and goat cheese.
Advices : to be served between 8 & 10°c ; ageing in cellar for 4 to 6 years.

Blending:

White Clairette grape

Cuvée coming from over matured grapes and often getting noble rot.

Wine making & Maturation

Long lasting fermentation in oaken barrel.

Tasting:

Eyes : A deep golden colour.
Bouquet : Intense flavours of honey, wax, gingerbread and candied fruits.
Palate : The olfactory flavours are very subtle in palate. The sugar is very light. The long lasting aromas are exceptional
Food pairing : For the aperitifs, with a foie gras, with blue veined cheese, for dessert or chocolate or alone for pleasure !
Advices : To be served between 6 & 8 °C ; ageing in cellar for 10 years or more !
