«The revival of the soil «La Roustière»

Blending:

100 % Small grape White Muscat

Selection of one parcel coming from one of the most sunny hills of the appellation. This stony hill  of «la Roustière» gives an exceptional maturity and complexity to the Muscat grape.

Wine making & Maturation : 

Made according the Methode Dioise Ancestrale.  After pressing, the must ferments at low temperature, then this half-fermented must is bottled. The fermentation goes on from the sugar of the grapes, thus giving a natural sweet and sparkling wine. 

Tasting :

Eyes : A golden colour, very fine and elegant bubbles.
Bouquet : Powerful, exceptional concentration of aromas ; muscat, exotic fruits, honey, spices, and antiquated wax aromas...
Palate : Excellent harmony with the olfactory aromas, very length in mouth.
Food pairing : For aperitifs deserts, chocolate and foie gras.
Advices : To be served between 4 & 6°c ;  ageing in cellar until 2 years.

Made according the Methode Dioise Ancestrale.  After pressing, the must ferments at low temperature, then this half-fermented must is bottled. The fermentation goes on from the sugar of the grapes, thus giving a natural sweet and sparkling wine. 

Tasting :

Eyes : A beautiful pale golden colour, very fine and elegant bubbles.
Bouquet : Intense Muscat flavours, enhanced by rose and lychee hints.
Palate : the palate is full and delicate, the muscat brings its powerful and its long-finish aromas...
Food pairing : For aperitifs desserts and foie gras
Advices : To be served between 4 & 6°c ;  ageing in cellar until 2 years.

Tasting :

Eyes : A pale golden colour with very fine bubbles.
Bouquet : Strong and fresh ; offering lychee, mango and white peach aromas.
Palate: The blending of the Muscat and Clairette brings an exceptional balance between sugar and freshness.  The palate reveals muscat and exotic fruits aromas.
Food pairing : For aperitifs, desserts or for pleasure.
